I created a super easy and tasty casserole! I am so proud of myself because I do not do this very often. This takes the deliciousness of enchiladas and pairs it with the comforting and filling feeling of pasta casserole. If you make it let me know what you think!
Ingredients:
1 pkg pork chops
1 large can enchilada sauce
1 pkg shredded cheese (your favorite kind. I used sharp cheddar)
1 can red kidney beans in chili sauce
1/2 pkg whole wheat penne pasta
Directions:
- Cook pork chops in the enchilada sauce a slow cooker on high for 4 hours.
- When pork is fully cooked, boil penne pasta.
- Cut/shred pork
- When noodles are fully cooked, combine with pork, sauce, and beans in a casserole dish.
- Cover with shredded cheese
- Cover with foil and cook at 350 for 45 minutes or until cheese is bubbly
- Optional, serve with a dollop of sour cream

I’m thinking that this would be good way to use up pork roasts! We covet pork chops too much to use them in the slow cooker! They cook fast enough by themselves in the oven, skillet or grill! Roasts are a different story though!
It really is delicious with roast and loin. I used loin this way once and it was amazing. I used pork chops because it was a crazy busy day and I had to get them cooked without doing any actual cooking myself LOL. I love the slow cooker for that.
Could this look any more yummy and seem any more easy! I think I will need to try this when I get an oven. My mouth is watering from the picture.
when you get an oven? Why don’t you have an oven? You know, if you have a crockpot and a microwave you could totally still make this! Just boil the noodles then mix it all together and zap it in the microwave!

What do you think?
I’m thinking along the same lines as you. Does taste better with sour cream but is is missing something. My husband added heat to it and thought it made it better. How about a can of rotel instead of the enchilada sauce? The enchilada sauce was excellent for tenderizing the meat but it’s so plain. Maybe cream cheese added to the casserole instead of topped w/ sour cream.
