Dr. Seuss’ birthday is March 2nd! Are you getting your green eggs and ham ready? What about your stack of books? My family is really excited about this day because he is one of our favorite authors. My kids adore The Lorax and my 6 year old daughter reads the The Cat in the Hat by herself.

So here is a really fun idea to celebrate his birthday! The instructions are below.
Cat in the Hat Cupcakes
- 1 boxed white cake mix
- 1 batch Buttercream Frosting (recipe follows)
- Wilton Icing Color, Red
- 1 package large marshmallows
- 1 red Fruit by the Foot
- 1 TBS water
Prepare the cake mix as directed. Divide evenly between two bowls. Tint one bowl to the desired shade of red with the Wilton Icing Tint (can use food coloring).
Spray cupcake liners with non-stick spray. Place 2 TBS of white batter in the bottom of each cup. Top with 2 TBS of red batter. Repeat until liners are ¾ full. Bake as directed on package. Cool on wire rack.
Prepare buttercream frosting. Fit a pastry bag with a star tip and fill with frosting. Frost in a spiral, beginning on the outside of the cupcake.
To prepare Cat in the Hat marshmallows:
Measure the fruit by the foot in lengths slightly larger than the diameter of the marshmallow.
Cut the Fruit by the Foot along the imprinted lines with a sharp knife or scissors, being careful not to handle too much.
Wrap one piece around the top and bottom of each marshmallow, sealing the ends with water. If you’ve cut it too short, lightly stretch until it fits.
Place one marshmallow in the center of each frosted cupcake.
Buttercream Frosting
- 3 Cups Powdered Sugar
- ¾ Cup Butter
- 1 tsp vanilla
- 1-2 TBS milk
Beat the butter and powdered sugar together with mixer (use whip attachment if using a stand mixer). Add vanilla. Mix in milk 1 tsp at a time until desired consistency.
