Hi Annie.
I currently weigh 170 lbs, I am 5’4 and before today the food diary on My Fitness Pal app featured gems such as sugary lattes, muffins, donuts, bread, and wine.
It isn’t my weight that is the biggest problem (although the last time I was this size I was 8 months pregnant), it is my energy and health.
At work, I arrive barely awake. By 2 pm I cannot focus and I slurp Diet Dr. Pepper like crazy. When I get home, I immediately take a nap until dinner time.
This isn’t healthy and this is not normal!
When a bunch of friends told me to join them on Whole30 I didn’t think twice. I created a meal plan, went shopping, and knew it was time to get my health and my energy back! (And hey – if I can get back to my healthy weight of 145 pounds, that will be a bonus)
So, let me show you links to the recipes I made and hopefully you can see that if I can do it – you can too! (and read below as I share how I felt throughout the day).
Whole30 Day 1 Meals
Breakfast: Kale & Sweet Potato Hash with Fried Egg
This was tastier than I thought it would be! And I had no idea how full I’d get from it – wow!! I was only able to finish half of it. My favorite part was the sweet potatoes. I roasted them the night before to save me time.
How I felt: Full. And I didn’t feel a super huge need for coffee either this morning.
Lunch: Healthy Taco Salad in a Mason Jar
I love mason jar salads! They are so incredibly convenient – I can make them on Sunday and stock my fridge with lunches that will last me all week! This one has sautéed veggies and salsa and guac, it was delicious!
How I felt: I was so hungry by 11:30. Like dying! And I was shocked at how much of this I ate – two entire plate fulls. The Whole30 program says to eat big meals so you don’t snack, and I did.
I did end up getting a head ache around 2 p.m. (around my Diet Dr. Pepper time). I drank a ton of lemon water and got up to move quite a bit. When I got home, I didn’t need a nap – that was a wonderful change!
Dinner: Greek Meatballs with Avocado Tzatziki Sauce
This recipe had a wee bit too much onion in it and it had quite a bit of spice. But it filled me up. Oh – I was so hungry when I got home at 5:30 that I ate a Larabar. I couldn’t help it. I was starving again. I’m not sure how I am going to do without snacking. I might rethink that and eat another Larabar at work tomorrow.
But the recipe was delicious, tons of flavor, especially in the cucumber/avocado sauce. I laughed as I realized I was dipping veggies in pureed veggies!
Now it is 9:30 p.m. and I am exhausted. I need sleep. Eventually I hope I can have enough energy to wake up early and go running or go for a jog after work. That’s my ultimate goal.
