In fact, it’s Whole30 compliant too! It’s a clean-eating, healthy side dish that my entire family loves. And it only takes 30 minutes, so you can see why I make it so often!

How To Make Roasted Garlic Potatoes in the Oven
If you don’t have a mandolin slicer, get one. I use mine constantly. It slices your potatoes evenly, which is critical to get them to all roast evenly.
You probably already have all the ingredients that you need.
Garlic Potatoes Ingredients
All you need to make these potatoes are the potatoes, salt, pepper, butter, and some seasoning.
If you don’t have garlic and herb seasoning, you can use my own combination.
Sprinkle some garlic powder, oregano, and parsley.
Sometimes, I add a bit of paprika if I want to add a smoky flavor to them too!
How To Make Crispy Potatoes In the Oven
I have a few tips that always help my potatoes crisp up perfectly! There is nothing worse than soggy pototoes!
After you slice them, rinse them off and then pat them dry. This removes the potato starch.
Slice them thin. The thinner you slice them, the faster they will cook and the crispier they will be.

30-Minute Roasted Garlic Potatoes

Ingredients
- 6-8 Potatoes
- 1/2 cup melted butter
- 1 tablespoon garlic and herb seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 400 degrees.
- Slice potatoes on the thin side & place on a baking sheet. Thinner the potatoes, the crispier they will be.
- Coat the potatoes in butter.
- Sprinkle with salt & pepper to your desired taste.
- Sprinkle garlic & herb seasoning into the potatoes.
- Bake for 30 minutes at 400 degrees.
- Serve & enjoy!
