Whenever I am invited to Easter dinners, people always ask me to bring the dessert. If you love to bake or you just want a new idea, make this lemon poppy seed bundt cake! It has all of my favorite spring flavors.
Since my favorite thing to order at the coffee shop is lemon poppy seed loaf, I decided to make a cake with these flavors. And now you can make it too!

I also suggest you use a stand mixer. It will speed up the entire process so much!
Use Whole Ingredients For The Best Cake

My first tip is to always use the freshest ingredients. When you make a cake from scratch (like in this recipe) you will notice a difference in the taste!
Butter The Bundt Pan
After you mix all the ingredients together, grease the bundt pan, even if you are using a non-stick pan. Then, dust the with some flour. This will help the cake to come out without sticking to it.
Make The Vanilla Glaze
Let the cake cool completely before you add the glaze. While it is cooling on a wire rack. make the glaze. All you need for this is some powdered sugar, milk, and lemon juice.
I like to add corn syrup to the glaze because it makes the lemon cake taste even sweeter.
How To Tell When The Cake Is Done Baking
You will know the cake is done baking when it is light golden, like in the picture below. When you insert a toothpick, it will come out clean.
Let The Cake Cool Upside Down
The beauty of a bundt cake is that it look so beautiful when you take it out of the pan. If you have never baked a cake like this, you should know that you decorate it upside down. This is where you will see the lovely decoration formed by the cake pan.
Add Your Favorite Easter Sprinkles
This is the fun part! After you drizzle the glaze on the top, add all of your favorite sprinkles and cake decorations.

Lemon Poppy Seed Bundt Cake For Easter
This lemon poppy seed bundt cake is perfect for the Easter holiday.
Ingredients
- Cake Ingredients List:
- • 1 ¼ cup cake flour
- • 1 ¼ cup butter, softened + extra for coating pan
- • ¾ cup sugar
- • ½ cup flour
- • 3 eggs
- • ¼ + 1/8 cup milk
- • 2 tbsp lemon juice
- • 1 ½ tbsp poppyseed
- • ½ tbsp baking powder
- Icing Ingredients List:
- • 1 cup confectioners sugar
- • 4-5 tsp milk
- • 2 tsp light corn syrup (optional)
- • ¼ tsp lemon juice
Instructions
- Mix together sugar and butter until creamy.
- Add eggs and lemon juice to the mixture and blend.\
- Combine the cake flour, all-purpose flour, and baking powder. Add to batter
and blend until thoroughly corporated. - Butter bundt cake pan.
- Pour batter into bundt pan.
- Bake 350 for 40 minutes or until cake tester comes clean.
- Set on wire rack to cool.
- Meanwhile, prepare icing by combining confectioners sugar, milk, lemon
juice, and corn syrup. Set aside. - With a spatula, carefully separate sides of cake from cake pan. Flip cake
onto wire rack and allow to thoroughly cool before icing. - To decorate, drizzle icing back and forth over the bundt cake. Quickly place
bunny candies around the cake before the icing hardens and sprinkle nonpareils over the top. - Slice and serve. Enjoy!
