It is so cold outside! I am trying to avoid the bundling and unbundling that is involved in leaving the house. My favorite winter comfort food is a gooey, crispy, grilled cheese sandwich. Grilled cheese and tomato soup go together like peanut butter and jelly – a match as perfect as Harry and Sally. Creamy, crispy, melty, zangy, and warm!
After doing my own research (google, Twitter, and just writing down how I feel after eating certain foods) I discovered I have more energy when I avoid gluten. I do not have celiac disease, but when I eat Gfree, I just feel better! So when I was craving a grilled cheese sandwich, I made it with Udi’s Gluten Free white bread.
Tip: The butter is easier to spread on the bread if you freeze the loaf first!
Then, as a special treat, I love the Gluten Free Dark Chocolate Brownie Bites! Oh they are so rich and delicious! And they are dark chocolate so not overwhelmingly sweet, more full and satisfying.

LOVE Udi’s and love having a grilled cheese with their breads. Last time I made a grilled cheese I added some sauteed onions and leafy greens. Oh my yum.

Those brownie bites are awesome! I would say comfort food for me is anything w/melted cheese, so this idea works, or mac-n-cheese, or pasta with cheese … you get the idea!

Other than that book, I have just my experience and the experiences of my friends to share. When I switched to Gfree, I had more energy. It is just as simple as trying something and seeing how it works. It worked for me 🙂 But if you want research and sources, check out the book above 🙂

Thanks. This can also be used as a bottom crust in a breakfast casserole. Juat apeead the bread with olive oil and place face down.
