One of my favorite ways to celebrate spring is by baking! Open up the windows, let the sun flood into the kitchen, and let the whole house fill with the aroma of sugar and flour. Today’s treat is a happy one – Chocolate Birds Nest Cookies!
Easy Chocolate Birds Nest Cookies Recipe
This is a very simple recipe. The cookies themselves are made with a cake mix. I added a wee bit more flour so they’d be a cookie consistency. Before you begin icing the cookies, you will need to let them cool for at least 2 hours. Otherwise the icing will melt.
Once you have the cookies ready, get your icing in your piping bag and grab your egg candies. The rest is pretty simple!
Icing the cookies is such a fun part. You could even let your children learn how to ice cakes by practicing on these cookies.

These cookies are perfect all year round. But I really enjoy making them every spring. It’s like a little celebration, welcoming the warm sunshine and seeing the flowers bud on the trees!
The last step is to add the egg onto your birds nest! Voila! Your masterpiece is complete! See how simple this is? Anyone can make them!
Variations of the Birds Nest Cookies
If you don’t like chocolate cookies, you can always use vanilla cake mix instead. The recipe remains the same.
If you don’t want to buy a piping bag, Creations By Kara suggests using shredded coconut instead. Just use food coloring to dye the coconut green!
Lots of other recipes call for chow mien noodles instead of batter cookies. That’s a fun idea too if you want to try it out.

- 1 box of chocolate cake mix, any brand
- 2 eggs
- 2 tbsp. flour
- 1/2 C. vegetable oil
- 3 C. powdered sugar
- 1/2 C. butter, melted
- 1 1/2 tsp. vanilla extract
- 2-3 tbsp. milk
- Disposable piping bag
- Grass round frosting tip
- Green food coloring
- 1 large package of Cadbury malted eggs (M&M's peanut butter eggs work great too)
- Preheat the oven to 350 degrees.
- Combine the cake mix, eggs, flour and vegetable oil.
- Roll the cookie dough into 2" balls and place 2" a part on a baking sheet.
- Bake 8-10 minutes.
- Remove from the oven and let cool.
- Combine the powdered sugar, melted butter and vanilla extract.
- Add the milk as needed.
- Add a few drops of green food coloring.
- Attach the frosting tip to the disposable piping bag and fill with frosting.
- Once the cookies have cooled, gently squeeze the frosting out of the piping bag, gently pulling up to make 'grass' on top of each cookie.
- Place 2-3 eggs on top of each cookie.
- Repeat.
