Cheesy Chili Lime Pork Casserole Recipe

There is something so very comforting about pasta casseroles. Every bite brings back memories of a warm home, the flavors complimenting each other and just spreading relaxing happiness.

I remembered it was National Pork Month and didn’t want to miss my chance to celebrate! This week, the clouds covered Kansas, the winds howled, and staying inside was far more enjoyable than leaving the house. I pulled out my slow cooker and opened my cupboard. I had no idea what I was going to make, but I new it was going to be delicious.

And it is.

Here is the recipe for you! You know any combo of pork, cheese, and noodles is going to be a winner.

First – Cook a pork shoulder roast in your crock pot! Rub it generously with Pampered Chef Chili Lime rub. Add some salt and pepper for taste. Cook on low 8 hours.

When pork is fully cooked – (Honestly, I cooked the pork the first day then made the casserole the next day but I know with better planning you can do this all in one day).

  • Boil whole wheat rotini noodles, drain
  • In a large mixing bowl, mix noodles, 2 cups shredded pork, 2-3 cups shredded cheese (pick your favorite flavor!), 1 can drained black beans, a 6 oz can of tomato paste, 1 tsp white wine vinegar, 1/2 teaspoon lime juice, salt and pepper.
  • Eat! (ok, so some people might prefer to heat the casserole in the oven first, but my family loves it freshly mixed)

It is sooooo easy and incredibly delicious!  You can omit the vinegar and lime juice and add Salsa if you want too!

    I’m sorry to say I actually don’t eat pork, BUT my husband eats enough for both of us. 😉 I think he’d be overjoyed if I came up with a recipe like this – so I might have to try it! Mostly he eats it in NC-BBQ!

    I like to cook a flavored pork loin in the crockpot, then shred it, add barbeque sauce, and cook it some more. Great piled on buns with coleslaw!

    I love to cook a Pork Butt in the slow cooker and then add McCormicks Pulled Pork to the pork. Then you cook it another hour. When it is done you have delicious pulled pork!

    I love to cook pulled pork in the slow cooker. I just add root beer and onions and then slow cook for eight to ten hours. The remove and shred with two forks. then put back in pot and add bbq sauce and let simmer for another hour. I am a fan of mama dweebs.     Well, I am now a vegetarian so I don’t cook OR eat pork anymore. But my favorite way was adding pork chops to my Sunday sauce, as well as using ground pork in the meatballs.

    I season the pork loin with oregano, basil, black pepper and cumin (rub it well) cut onions and garlic and add it all over. Let it sit from the night before. then sautee the onions and garlic for a while, then brown the pork, add cooking wine and water, then cook on medium until it comes apart, then I take the pork out and let the jiuce cook for about 1/2 anhour to thicken, then I add the pork and Voila, YUMMY………

    My favorite way to cook pork is to put a Boston Butt in the crockpot all day and have pulled pork! We like to eat it with rice and hash ( a southern thing) SOOOo freakin yummy!!

    I cook this marinated pork in a summer corn salad and the family loves it. You marinate the pork in a honey, lime juice, jalapeno and cilantro. Cube it up and add it to spinach, red peppers, and corn. We eat it with tortilla chips

    Slow cook pork tenderloin, pull,add what ever seasonings, add yellow based BBQ sauce, simmer! This is the only way to eat pork. My husband loves pork steak, which is OK! He likes it fried, I like mine broiled.

    I like to put a pork tenderloin in my old slow cooker with some soda (preferably root beer) for 6 or 8 hours…then drain off the soda, add bbq sauce, and serve on burger buns. Simple pulled pork that everyone seems to enjoy!

    I am actually a vegetarian, but my boyfriend’s absolute favorite dinner is Pork Chops, so I cook them often. I usually saute them in a pan with honey butter and some seasoning, but a slow-cooker would be an absolute fantastic way for me to cook meals with more flavor development and not as much hands-on interaction with the meat itself.

    absolutely in the crock pot….naked for 8 hours then brush on some sauce and broil a few minutes. Unless I can get my husband to take me to Hog Fathers for ribs…lol!

    I make our pork by coating a shoulder roast with BB dry rub, adding about 1/2 inch water on the bottom of the crock-pot and then put it on low for 10 hours. When the time is up, I take the bone out, pick off any globs of fat that I see and then separate it with two forks until it is all pulled apart. Then, I take and place it back in the crock pot and stir in about 1/2 to 3/4 bottle of the latest BB sauce or even some Mojo marinade and let it heat up for another 1/2 an hour.

    I make some fresh coleslaw and bring out the buns for the family to make a lovely Pulled BB pork and slaw sandwich. Huge hit, especially at the family get-togethers. The best part is I can put the pork in frozen, cook it overnight and have the whole thing 95% done by morning. Everyone thinks I spends hours of my time on it 🙂
