Easy Bacon & Egg Bites – Grab & Go Breakfast
Now, you’ve got your coffee, let’s talk about these delicious bacon and egg bites you can take with you in the car on busy mornings.
Making the recipe takes only 30 minutes from start to finish. 5 Minutes of prep, 25 minutes cooking. And they are portable, so you can eat them in the car.
The first step is to preheat your oven to 375 degrees. While it is preheating you can prepare the muffin tin. Just do what I did – lay the bacon around the inside of the tin. I sprayed the tin with nonstick spray first.
I did a few different options of the eggs in the tin to show you how you can customize this for you and your family. My family all unanimously agreed they prefer when I scrambled the eggs and cheese together before placing it in the cups. No one liked the whole egg method in the top left. After it cooks it resembles a hard boiled egg and no one here is a fan of hard boiled eggs.
Then bake for 15-25 minutes, depending on how crispy you like your bacon.
