I am constantly striving to learn more about cooking with organic, whole foods. It makes logical sense – the less stuff we add to our foods, the better it is for us. Whole foods have more nutrition and less junk! I am not 100% there yet, but I am trying.
I used LAND O LAKES® Eggs. They are produced by hens fed a premium vegetarian whole grain diet consisting primarily of whole ground corn and soybean meal, with no added hormones, antibiotics, animal fats or animal by-products. If I am going to start eating healthier, I can start in small ways by making smarter choices in which eggs, meats and produce I purchase.
A few thoughts:
Lizzie was shocked that the eggs were brown! They sell organic, white eggs too, but I wanted to introduce her to brown eggs. The yolks are brighter yellow and the flavor of the casserole is fuller. It is a huge relief to me to know I am eating eggs and only eggs when I serve my family dinner. The cost is a smidge higher for organic eggs – $3/dozen vs. $1.
You can use organic spinach as well – I used frozen, chopped spinach to speed up prep time. Pairing with organic fruits makes for a light – yet filling – dinner!
I was given a coupon to try these eggs. They were yummy and that is my opinion.

I love organic eggs. Like you said, they make casseroles and the like fuller. I’m going to try this with some organic spinach to see how it is. I’ve never used organic spinach either, frozen has me spoiled.

That is just nuts! Why are they so expensive in NYC? I actually can get farm eggs from free range hens for $1 a dozen from farmer friends too. Kansas is a pretty cheap place to live I guess 🙂

This looks delicious! We try to eat organic (and even, better, local) when we can. It is more expensive, but I find ways to cut costs on other things that are less important to me.
