Make Ahead
These nachos taste the best when you pull them right out of the oven. The cheese will be all melted into the crevices of the pork rinds!
To save yourself time, you can make the taco meat ahead of time. Then, store it in a sealed food storage container until you’re ready to assemble and bake the nachos.

Keto Toppings
Remember, every vegetable and topping has carbs in it. It’s best to use a carb-counting app and calculate how much you can eat before you dig in.
On my nachos, the tomatoes have the most carbs in them. Use them sparingly. Hot sauce and jalapenos are low in carbs.
Beans are high in carbs, too, so I suggest staying away from them unless you have enough carbs left over from your macros budget.
Guacamole, sour cream, and cheese are high-fat options that will keep you in ketosis.
Keto Chips
I prefer to use pork rinds as the base of these keto nachos! They are carb-free and have a delightful crunch to them!
If you want, you could just heat up the taco meat and toppings and then use some cheese crisps to dip into them.
Another healthy option is to use the toppings as filling for stuffed peppers! Yum! You can even add some taco-spiced cauliflower rice as a filling for them.
Are tortilla chips keto? No, they are not. Read the nutrition label, and you’ll see that they are packed with carbs. Even “keto tortillas” could affect your glucose levels and make it more difficult for you to lose weight. Pork rinds or keto cheese crisps are your best options.

Keto Nachos
Baked keto nachos are a low-carb game-day appetizer or snack that everyone will devour!
Ingredients
- 10 ounces Pork Rinds
- 2 cupsShredded Cheese
- 1 pound Ground Beef
- 1/2 cup Chipotle Ranch
- 2 Roma Tomatoes diced
- 4 Green Onions diced
- 1/2 Red Onion diced
Keto Taco Seasoning
- 1/2 tsp Cumin
- 1/2 tsp Smoked Paprika
- 1/2 tsp Chili Powder
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Salt
- 1/4 tsp Pepper
Instructions
- Prepare your taco meat. I browned and drained 1 lb of hamburger, then seasoned it with keto-friendly spices: cumin, smoked paprika, chili powder, garlic powder, onion powder, salt and pepper (½ teaspoon each, adjust per your preferences).
- Pour the pork rinds in a 9x13 baking dish and arrange evenly.
- Sprinkle the prepared taco meat evenly over the pork rinds.
- Sprinkle 2 cups shredded cheese over the taco meat. I used colby jack. Shredded queso or cheddar also work well.
- Bake for 15 minutes at 350.
- Pour on chipotle ranch sauce or sour cream.
- Dice up tomato, green onions and red onions. Sprinkle on top.
- Add any other toppings desired. Enjoy!
